A yummy, easy dessert for the family or when you have guests
8 green apples, peeled, cored and thinly sliced
1 cup of sultanas
2 teaspoons of cinnamon sugar (more or less, to taste)
2 teaspoons white sugar (more or less, to taste)
Water
2 sheets puff pastry
1 beaten egg
Put the apples in a large saucepan and add enough water to just cover them
Bring to the boil then simmer covered on a low heat until apple is almost completely softened
(about 15 minutes)
Add sugars and sultanas and continue to cook until apple is completely softened
and sultanas are swollen and soft (about 10 minutes)
Let the mixture cool down then drain and put into a pie dish
Lightly wet the top edge of the pie dish with water and line it with wide slices of defrosted puff pastry (about 3cm wide - cut from 1 sheet)
Lightly wet these pieces of pastry with water after they've been placed around the dish -
ensure any overlapping pieces are wet prior to joining
Cut the other sheet of puff pastry to fit the pie dish
(I generally just cut the corners off a square piece of pastry and leave enough
to slightly overlap the sides of the dish)
Lay this sheet on top of the dish then fold the underlying pieces of pastry over the top to seal
Press a fork all the way around the edge to hold the seal
Cut four x 2cm slices in the pastry lid and brush the whole thing with beaten egg
Place in a hot oven for approximately 45 minutes
