1 cup of white rice (jasmine or medium grain), cooked
1 small zucchini - slice it relatively thickly then cut the slices into quarters
1 medium brown onion, peeled and diced roughly
2 cups of frozen mixed vegetables (I use diced carrot, peas, corn & beans)
150 - 200 grams of diced bacon (from the supermarket)
1/4 of a cup of soy sauce
1/4 of a cup of worcestershire sauce
2 tablespoons of canola oil
1 decent sized non stick frypan or a good non stick wok
Cook the onion and bacon in the oil over a medium heat until the onion is golden
and the bacon is browned all over
Add the zucchini and cook for a couple of minutes,
stirring so the zucchini gets coated in the mixture and gets a bit soft
Turn down the heat just a little then add the cooked rice and mix through - thoroughly
Add the mixed vegetables and sauces, stir through
so the sauces are evenly distributed throughout and all the mixture is coated
Turn down the heat to medium low and continue to stir periodically
until the mixed veges are cooked (just a few minutes)
Make sure that you stir the whole thing thoroughly whilst cooking, so the flavours are evenly distributed and the rice doesn't stick (non stick frypans sometimes don't live up to their name)
